Originally from Wiona, Minnesota, Don discovered his passion for cooking early and went on to graduate from the Florida Culinary Insitiute. His career has taken him to prestigious kitchens, including Mar-a-lago and the International Polo Club, where he cooked for celebrities and even a presidential candidate.

          Don's signature dish - Parmesan Herb Crusted Chilean Sea Bass with lemon beurre blanc - reflects his love for bold, balanced, flavors. After years in Florida, he chose to move closer to family in Iowa and found the camaraderie he missed here at Friendship Village.

           1 each- 1 1/2 lb Main Lobster
           &#xD;
      &lt;br/&gt;&#xD;
      
           1 Tbsp Extra Virgin Olive Oil
            &#xD;
      &lt;br/&gt;&#xD;
      
           2 Tbsp Whole Butter
           &#xD;
      &lt;br/&gt;&#xD;
      
           2 tsp Minced Shallot
           &#xD;
      &lt;br/&gt;&#xD;
      
           1 cup sliced Button Mushroom
           &#xD;
      &lt;br/&gt;&#xD;
      
           1/4 cup Brandy
           &#xD;
      &lt;br/&gt;&#xD;
      
           2 Tbsp all purpose Flour
           &#xD;
      &lt;br/&gt;&#xD;
      
           1 Cup Heavy Cream
           &#xD;
      &lt;br/&gt;&#xD;
      
           1/2 cup Shredded Gruyere Cheese
           &#xD;
      &lt;br/&gt;&#xD;
      
           1 Tsp Dijon Mustard
           &#xD;
      &lt;br/&gt;&#xD;
      
           Pinch of Cayenne Pepper
           &#xD;
      &lt;br/&gt;&#xD;
      
           1 Tbsp Grated Parmesan Cheese
           &#xD;
      &lt;br/&gt;&#xD;
      
           Lemon Garnish
           &#xD;
      &lt;br/&gt;&#xD;
      
            
           &#xD;
      &lt;br/&gt;&#xD;
      
           1. Cook Lobster in salted boiling water for 8 minutes.
           &#xD;
      &lt;br/&gt;&#xD;
      
           2. Chill Lobster in ice bath
           &#xD;
      &lt;br/&gt;&#xD;
      
           3. Cut Lobster lengthwise
           &#xD;
      &lt;br/&gt;&#xD;
      
           4. Take out lobster tail meat and rinse
           &#xD;
      &lt;br/&gt;&#xD;
      
           5. Break off claws and crack out meat in claws and knuckles.
           &#xD;
      &lt;br/&gt;&#xD;
      
           6. Cut meat into bite sized pieces and set aside
           &#xD;
      &lt;br/&gt;&#xD;
      
           7. Rinse and Clean out shell
           &#xD;
      &lt;br/&gt;&#xD;
      
           8. Sautee shallots in olive oil and butter until translucent on medium heat
           &#xD;
      &lt;br/&gt;&#xD;
      
           9. Add Mushrooms and cook until tender
           &#xD;
      &lt;br/&gt;&#xD;
      
           10. Add flour and whisk together
           &#xD;
      &lt;br/&gt;&#xD;
      
           11. Add Lobster meat
            &#xD;
      &lt;br/&gt;&#xD;
      
           12. Deglaze with Brandy and reduce
           &#xD;
      &lt;br/&gt;&#xD;
      
           13. Whisk in Heavy Cream and reduce
           &#xD;
      &lt;br/&gt;&#xD;
      
           14. Add Cayenne and Dijon
            &#xD;
      &lt;br/&gt;&#xD;
      
           15. Add salt and white pepper to taste
           &#xD;
      &lt;br/&gt;&#xD;
      
           16. Add in cheese
            &#xD;
      &lt;br/&gt;&#xD;
      
           17. In empty shells, spoon in mixture
           &#xD;
      &lt;br/&gt;&#xD;
      
           18. Sprinkle on Parmesan
            &#xD;
      &lt;br/&gt;&#xD;
      
           19. Broil in oven until golden brown
            &#xD;
      &lt;br/&gt;&#xD;
      
           20. Serve with Wild Rice, Grilled Asparagus and Lemon Wedge
          &#xD;
    &lt;/span&gt;&#xD;

           1.   Is the Perfect Size for Singles or Couples

           Some people dismiss the idea of living in a one-bedroom apartment because it may look and feel “tiny” compared to their current home. (Hotel rooms are often near-by, too.) Find CCRCs that have plenty of personal storage and common areas designed for family gatherings, crafting, woodworking, gardening and other activities.

Your monthly fee generally covers maintenance (including emergency repairs or appliance replacement), meals, housekeeping, transportation, activities, snow removal, landscaping, insurance, and in some cases, even your property taxes! TIP #3. A LifeCare CCRC has the added benefit of a predictable monthly fee, so you don’t have to fear the future no matter what level of care you need or how high future health care costs rise.

Continuation of exercise, game-night, and dining routines help battle the ‘cabin fever’ that often accompanies winter isolation.

           The holidays are a busy time, and many times our own health takes a backseat to the hustle and bustle of the season. It is important for us to make sure that we are eating healthy, exercising daily, and getting enough sleep. 
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            During these cold winter months, when we can’t go outside, exercise can be harder to get. We need to be creative-instead of walking outside, can I go to the mall, a building with long hallways, or the Sportsplex to walk? As you are out and about, park farther from the store. That helps to get a little “extra” walk in as you go in and out. It is easy to exercise within your home, and you don’t need gym equipment! For arm exercises, use soup cans, or bottles of pop, as your weights to provide a bit of resistance. Complete basic arm or leg exercises while sitting in a sturdy chair, or standing in front of your counter.  Turn on your favorite music while you do this!
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Getting enough sleep is very important. Sleep is the time your body is able to rest and recharge. We are more likely to catch an illness when our body is rundown, and being sick during the holidays is no fun. Stick to a nightly routine, including going to bed at the same time, and not using your phone after you go to bed. This will help you fall asleep easier. 
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Lastly, it is important to remember to maintain a healthy diet during the holiday season. There are so many goodies tempting us! The key is to eat some of those goodies, but also remember to eat some of our healthier foods also. There are a few easy ways to do this. Before you go to a holiday party, eat a light meal with nutritious foods-protein and fruits and vegetables. That way you won’t be as hungry at your holiday party, and less likely to fill up with unhealthy snacks and treats. Also, if you are asked to bring a dish to a holiday gathering, choose to bring something with some nutritional value. Remember to drink plenty of water, and limit alcoholic drinks. 
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;

            The open house on October 24, showcasing the Lodge and sharing the need, was attended by nearly 100 visitors. The enthusiasm generated has resulted in a great response – gifts and pledges received through mid-November total 101,773.00!   The Friendship Village Auxiliary and the Friendship Village Foundation each contributed $25,000.00, and individuals and couples have joined in to bring us close to the goal’s completion. Friendship Village is adding improvements to the Lodge, as well as those identified above.  Gifts received beyond our goal will help offset these additional upgrades.   
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
            
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           End of year is always a good time for each of to review our charitable giving. If you feel led in your heart to contribute to Friendship Village through either the Auxiliary or the Foundation, let me recommend our Wellspring Living skilled care unit. Wellspring’s worth is immeasurable, and we are continuing to underwrite it’s furnishings. 
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
            
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;

           If you have not yet done so, do consider a gift to the Employee Christmas Bonus Fund. As you know, there is “no tipping” for services done, and this is our thank you to our employees. Gifts for the Employee Christmas Bonus Fund should be sent directly to the Friendship Village finance office.

            Gates has been instrumental in shaping and modernizing Friendship Village, overseeing the most significant improvements to its campus in history, and establishing It Takes A Village Childcare. During her tenure, Gates built relationships and partnerships that make Friendship Village a wonderful place to live and work.

      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;

            It’s almost that time of year again – Medicare’s Annual Enrollment Period begins October 15th and runs to December 7th. This is the time of year when Medicare beneficiaries have the opportunity to review their current Part D and Medicare Advantage Plan coverage and make any changes that will take effect January 1st 2025.

      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;

They will be putting on Medicare events that will be open to the public in an effort to keep our community informed on these changes and updates.            Many Medicare beneficiaries will see changes to their Part D prescription drug plans and Medicare Advantage plans for 2025. Annual Notice of Change (ANOC) packets have gone out and will detail these changes. Beginning in 2025, The “donut hole” will be eliminated and out-of-pocket drug costs will be capped at 2,000 for the year. With these changes, we expect some plans to raise premiums and adjust copays to balance out the costs.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;

           For those of you who have a Medicare supplement, premiums are projected to increase 10-14%. This is due to higher claims over the past couple years and record inflation. During the COVID-19 pandemic, many people delayed non-urgent medical services, which is now impacting premiums.

           According to the Bureau of Labor Statistics (BLS),

           the average person aged 65 and up spends $52,141 a year, or $4,345 a month

           . Breaking this down further, those ages 65 to 74 spend $56,435 a year ($4,703 a month), while those who are 75 and up spend closer to $45,820 a year ($3,818 a month). This is based on 2021 data, the most recent data available, so the numbers may have increased.

  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;

           To get a better idea of the realities many Americans face upon retiring — and how to better prepare for them — GOBankingRates spoke with Scott DePeralta, who retired early but now serves as the president of

           Here’s what he said have been his biggest unexpected retirement costs to date.
          &#xD;

  &lt;/p&gt;&#xD;
  &lt;h3&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Home Maintenance and Healthcare
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/h3&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           “When I retired, I encountered some unexpected expenses that significantly impacted my retirement lifestyle and budget,” said DePeralta. The two big ones were home maintenance and healthcare.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           The cost of home maintenance varies widely. According to State Farm, however, it’s best to budget in between 1% and 4% of your home value for annual maintenance costs. In the U.S., the average home sales price is $492,300. For a home valued at this amount, that means you should expect to spend anywhere from $4,923 to $19,692 a year on maintenance.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           And when it comes to healthcare, it’s no secret that people in the United States have one of the highest financial burdens. According to CMS.gov, the average person spent about $13,493 on health-related costs in 2022, a 4.1% increase from 2021. Costs continue to rise, as well, making it harder to plan for these expenses.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Of course, everyone’s situation is different. Here’s what DePeralta said about the surprise expenses he’s had to deal with since retiring.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;h3&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Medical Bills and Prescription Expenses
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/h3&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           “One big area was healthcare-related costs, particularly medical bills and prescription expenses,” said DePeralta. “The need for certain medications and treatments ended up costing me around $500 per month, which was more than I had initially budgeted for. This forced me to adjust my financial plan and allocate more funds towards healthcare, impacting the discretionary income available for leisure activities or travel.”
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           DePeralta’s story isn’t untypical, either. Even individuals who qualify for Medicare have to pay some costs out of pocket.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           For example, the average premium for Medicare Part B is $174.70 a month. The exact cost depends on the individual’s income. Medicare enrollees also have to pay a $240 yearly deductible — and an additional $1,632 whenever they’re admitted to the hospital under Medicare Part A.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           The cost of other services, such as treatments, preventative care and medication, vary widely based on the healthcare plan, whether the service is out-of-network and individual need. However, the average out-of-pocket prescription medication costs for adults of any age is $177 a year — more for those ages 65 and up.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;h3&gt;&#xD;
    &lt;span&gt;&#xD;
      
           New Roof and HVAC System Replacements
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/h3&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           The other big expense DePeralta’s been hit with during retirement is related to his home.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           “Home maintenance and repairs also caught me off guard,” he said. “The necessity of a new roof and HVAC system repairs proved to be significant costs, totaling approximately $3,000 for the roof and $1,500 for the HVAC repairs.”
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           These unexpected expenses have had a direct impact on his retirement budget. “I had to reallocate funds from other areas to cover these essential home repairs, ultimately affecting the overall financial flexibility of my retirement lifestyle,” he said.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           If you’re a homeowner, too, chances are you’ll end up facing similar costs throughout your life — and well into retirement. Even if you’ve paid off your mortgage, something many financial experts recommend doing before retiring, you’ll still need to consider things like utilities, insurance, taxes and repairs.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Certain things, like property taxes, can rise based on such factors as the perceived market value of your home. Homeowners insurance premiums may also increase due to inflation or based on other external factors — like environmental disasters or severe weather changes.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           As for repairs and general maintenance, costs vary based on location, your home’s age, your appliances, square footage and more.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;h3&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Preparing for the expenses is key
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/h3&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           “Unexpected expenses in retirement, especially in healthcare and home maintenance, can have a profound effect on one’s financial plan and lifestyle,” said DePeralta.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           By anticipating and preparing for these costs as much as possible ahead of time, it’s easier to obtain that much-needed peace of mind and financial security in retirement.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Keeping in mind that your exact costs will be unique to you, here are a few other common — yet largely unexpected — expenses many retirees face and how to prepare for them:
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;ul&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Long-term care: According to the U.S. Department of Health and Human Services, around 70% of people who are 65 and older will need long-term care for at least 3 years. The typical cost of a private room in a nursing home facility is $116,800 a year. In-home care costs $68,640 to $75,504 a year, depending on what you need. You can purchase a long-term care policy to offset these costs.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Transportation: If you have a car, account for maintenance, fuel, insurance and depreciation. One way to combat this cost is to take public transportation or, if that’s not possible, to get a vehicle with low overall costs and a high safety and reliability rating.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Emergencies: Life happens. Whether that’s an adult child coming to you who needs your help, a spouse passing away — and potentially lowering your household’s retirement income — or something else, costs can add up. Some ways to protect yourself include buying life insurance, investing in tax-advantaged retirement funds and building passive income streams.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
  &lt;/ul&gt;&#xD;
  &lt;p&gt;&#xD;

            When Should It Be Assisted Living?
           &#xD;

            Quite often there is a conversation had by many families--does my loved one need Assisted Living?
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           An Assisted Living is community living, usually an apartment building with staff available to help someone with a few ‘Activities of Daily Living’ tasks. Assisted Living settings will also have meal/cooking options, housekeeping services, and activity events to make your life more full.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Assisted Living is that step between living in your home independently, and needing care from a Nursing Home. Assisted Living bridges that gap between the two. Quite often Assisted Living is a great choice when the person is starting to have memory issues or a diagnosis of Dementia. The loving care of individuals working in Assisted Living can provide great direction and cues to someone just needing help with memory to find their room, to know when it is time to eat, to help them with medications, to help them find opportunity to socialize.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           To live in Assisted Living, you should be able to do some things for yourself, like walking or getting around throughout the day (even if using a walker, cane, or wheelchair), dressing yourself (most of it with possibility of a little help), bathing (some assistance is alright, if needed). And you can leave the cooking and cleaning to the staff!

            Let’s find a place where it is secure, and you don’t have to worry about your safety.

            Let’s find a place where you get help when you need it most but also allows you to continue to do the things you still can do for yourself.

            Let’s find a place where you don’t have to worry about yard work or shoveling snow.

           Some people dismiss the idea of living in a one-bedroom apartment because it may look and feel “tiny” compared to their current home. Think about how much of your current home you actually use regularly? If you’re like most retirees, you live your life in the kitchen, living room and one bedroom. The 2nd or 3rd bedroom, a dining room, the basement or a den served you well raising your family, but now those areas simply accumulate more “stuff.” 1-bedroom apartments dedicate their square footage to the areas people use most. TIP #1. Look for high ceilings to make them feel even more spacious!

            This time of year, many retirees want to put down their snow shovels and start considering retirement community living. The thought of year-round, maintenance-free, active living is an exciting thought that is sometimes short-lived when the panic of “but what do I do with all my stuff” kicks in. Why not make the move a smooth transition for yourself by creating a plan with just a few simple steps?
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
            
          &#xD;
    &lt;/span&gt;&#xD;

Sometimes it works best to have a focus, for example: “Today, we are only working on clothes,” or “This is our garage day.”

Taking frequent breaks, playing favorite music, or ordering in pizza or Chinese food can be a fun way to reward yourself for making progress!

Loading up boxes and bringing items to charity organizations for you can be a real advantage of using these types of companies.

      &lt;/span&gt;&#xD;

            1/2 cup sugar

      &lt;/span&gt;&#xD;

             2 tablespoons lemon juice

           For the Mascarpone Filling
          &#xD;

            2 (8 oz) packages mascarpone cheese
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            1 cup white chocolate (I use baking chips and melt with a little butter or oil)
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            1 cup heavy cream
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
  &lt;/ol&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           To Assemble
          &#xD;
    &lt;/span&gt;&#xD;

            8 ounces ladyfingers (can also use sponge cake)
           &#xD;
      &lt;/span&gt;&#xD;

    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;

            Lemon Curd
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           1.   In a medium saucepan, whisk the egg yolks, whole eggs and sugar together until combined. Whisk in the lemon juice, zest and salt.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           2.   Add the butter and cook over medium-low heat, stirring constantly, until the mixture thickens to a thin sauce-like consistency, about 5 minutes.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           3.   Immediately strain the curd through a fine-mesh strainer into a medium-size bowl and stir in the cream. Cover with plastic wrap and place in the refrigerator to cool completely.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
            
          &#xD;
    &lt;/span&gt;&#xD;

           1.   Place blueberries and water in a medium saucepan over medium-high heat. Using a whisk or wooden spoon, crush the berries. Bring the berries to a boil, then lower temperature to medium-low and simmer for about 10 minutes.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           2.   Remove pan from heat and pour berries into a strainer over a glass measuring cup or bowl. Using he back of a spoon or ladle, press as much juice out of the blueberries as you can. Discard solids.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            3.   Return blueberry juice to the pan, then add lemon juice and sugar. Bring to a boil and simmer for about 5 minutes until mixture thickens slightly. Remove from heat and chill in refrigerator to cool completely.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Mascarpone Filling
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           1.   Microwave white chocolate in a microwave-safe bowl until smooth. Set aside. Whip heavy cream in a stand mixer or with a hand mixer until soft peaks form. Set aside.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           2.   Cream mascarpone cheese in a stand mixer for about one minute. Add melted chocolate and mix until combined. Fold ¼ of the whipped cream into the mixture. Add the remaining whipped cream and fold–try not to overmix!
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           To Assemble you will need a 9x13 dish.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           1.   While wearing gloves (the blueberries might stain your fingers), dip each lady finger into the blueberry syrup and place one layer on the bottom of your dish. 
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           2.   Spread half of the lemon curd on top of the blueberry syrup-soaked ladyfingers. Then follow with half of the mascarpone filling.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           3.   Repeat these steps one more time with remaining ingredients, and garnish with a sprinkle of fresh lemon zest or blueberries. Place in the refrigerator for at least 4 hours or overnight before serving. Enjoy!
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Notes: Blueberry Syrup and lemon curd can be made a day ahead of time. If using lady fingers, I suggest storing in refrigerator over night to insure the fingers are soft when eating. This will keep about 3-4 days in refrigerator. 
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;

  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;

A trip to the local bike shop or running store will pair you with equipment that matches your current ability. That will help set you up for success – which almost guarantees you will stick with it.

What’s the second thing to do? Put your list in existence on your calendar and go have some fun!

            Popular aspects of senior living rental communities are that there is no upfront entrance fee. In home care-givers and/or nursing services can be available for an extra fee. Some even allow your family members to provide care, which can be a budget-friendly option. “At home or travelling” care services allow you to ‘age in place’ more easily. Couples can also stay together when one needs more care than the other.

    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;

           Imagine having your own spacious apartment or custom home, but not the worry of maintaining a home or yard! Similar to a vacation-lifestyle, this is a great option for active seniors who want to be free to travel, socialize and have many of their monthly expenses rolled into one payment.

  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;

      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;

           Another category is the more traditional ‘retirement community.’ This option means that all levels of care (from independent living, to assisted living, to skilled nursing care and even memory care) can be found on the same campus.  
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            A sense of community is a hallmark of these organizations. If you want to ‘join in’ where you live, these are a great option. The people who move in to these communities often become closer than family.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           If you wish, maintenance free living and a virtually all inclusive lifestyle, enable you to create an active schedule because there are so many things to do!
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            You will rub shoulders with new friends who have shared life’s experiences through planned events, trips, clubs and activities.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Generally in a CCRC, you move from one building to the next when your care needs exceed the ‘fit’ of the previous apartment home, but you stay within the same campus. I know, the idea of moving again, even many years in the future, may not excite you, but having access to the right environment when you need it will be a relief not only to you, but your family as well. Some CCRC’s are Lifecare communities that enable you to move from independent living to a higher level of care without a significant increase in the monthly fee so you can do so without fear of exceeding your financial resources or jeopardizing your estate.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;

  &lt;p&gt;&#xD;

            In closing, I encourage you to look for organizations that carry a non-profit orientation. That means that decisions are resident focused, instead of profits or ownership.

  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;

    &lt;span&gt;&#xD;
